Yo Egg Fried Rice

 

Yo Egg Fried Rice

  • 1 ½ tbsp avocado oil for cooking 
  • 2 cloves garlic, minced 
  • 400g cooked white rice (long grain) 
  • 1 green onion, finely sliced 
  • 2 tsp soy sauce 
  • 1 tsp toasted sesame oil 
  • TT salt & pepper 
  • 1 fried Yo Egg
  • 1 tsp sesame seeds for garnish
  1. Heat a wok on high heat then add the oil. 

  2. Once the oil is hot, add the garlic and saute for about 30 seconds until fragrant and golden.

  3. Add the rice and fry for a couple of minutes, breaking up any clumps.

  4. Add the green onion, soy sauce and sesame oil and continue mixing to make sure everything is evenly coated.

  5. Serve 1 1⁄2 – 2 oz portions of rice and top with a mini fried Yo Egg, black salt and sesame seeds.
