Yo Egg Fried Rice

Ingredients
  

  • 1 ½ tbsp avocado oil for cooking 
  • 2 cloves garlic, minced 
  • 400g cooked white rice (long grain) 
  • 1 green onion, finely sliced 
  • 2 tsp soy sauce 
  • 1 tsp toasted sesame oil 
  • TT salt & pepper 
  • 1 fried Yo Egg
  • 1 tsp sesame seeds for garnish

Instructions
 

  • Heat a wok on high heat then add the oil. 
  • Once the oil is hot, add the garlic and saute for about 30 seconds until fragrant and golden.
  • Add the rice and fry for a couple of minutes, breaking up any clumps.
  • Add the green onion, soy sauce and sesame oil and continue mixing to make sure everything is evenly coated.
  • Serve 1 1⁄2 – 2 oz portions of rice and top with a mini fried Yo Egg, black salt and sesame seeds.
