Chickpea Akara with Mango Salsa

Ingredients
  

For the Chickpea Akara:

  • 2 cups cooked chickpeas, drained 
  • ½  cup finely chopped onion
  • ¼ cup finely chopped cilantro 
  • 2 cloves garlic, minced 
  • 1 ½ tsp ground cumin 
  • 1 ½ tsp ground coriander 
  • ½ tsp paprika 
  • ½  cup chickpea flour (gram flour) 
  • ½ tsp salt 
  • ⅛-¼ cup water (as needed)
  • Oil as needed for frying

For the Mango Salsa:

  • 1 ripe mango, peeled, pitted, and diced 
  • ½ jalapeño, seeded and diced
  • 1/4 cup red onion, finely chopped 
  • 1/4 cup chopped fresh cilantro 
  • 1 juice of a lime 
  • TT salt & pepper 

Instructions
 

  • Chickpea Akara: In a food processor bowl, combine the chickpeas, chickpea flour, finely chopped onion, chopped fresh cilantro, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper. Pulse until the mixture holds together. Transfer to a mixing bowl and add water as needed to bring the mixture together. 
  • Heat oil in small saucepan to 350° over medium heat. Using a small portion scoop, scoop the chickpea mixture into the oil. Cook until fritters are golden. Remove from oil and allow oil fritters to drain in frying basket or on paper towel-lined plate.
  • Mango Salsa: In a blender, combine diced ripe mango, finely chopped red onion, chopped fresh cilantro, jalapeño, lime juice, salt, and black pepper. Blend until smooth.

Assembly

  • Arrange the Chickpea Akara on a serving platter. 
  • Spoon the Mango Salsa over the akara or serve it in a bowl alongside for dipping.
